For the Meatballs
  • 1 tablespoon vegetable oil to sauté meatballs
  • 1 pound lean ground pork
  • 1/2 cup plain breadcrumbs
  • 2 cloves garlic minced
  • 2 tablespoons ginger minced
  • 2 tablespoons soy sauce
  • 1 large egg for binding
  • 1/2 teaspoon black pepper to taste
For the Soup
  • 4 cups chicken broth low sodium or no salt
  • 2 cups water
  • 2 tablespoons ginger sliced into matchsticks
  • 3 cups baby bok choy chopped
  • 2 medium carrots chopped
  • 1/4 cup green onions chopped, for garnish
For the Seasoning
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil

Method
 

Cooking Instructions
  1. Heat the vegetable oil in a large pan over medium heat.
  2. In a mixing bowl, combine the ground pork, minced garlic, minced ginger, breadcrumbs, soy sauce, egg, and black pepper. Mix until well combined.
  3. Form the mixture into bite-sized meatballs and set aside.
  4. In a large pot, combine chicken broth, water, and sliced ginger. Bring to a boil.
  5. Gently add the meatballs into the broth and cook for 8-10 minutes or until no longer pink.
  6. Add bok choy, carrots, and green onions, along with soy sauce, rice vinegar, sugar, and sesame oil. Stir well.
  7. Let the soup simmer for 5-10 minutes until the vegetables are tender.
