Method
 

How to Make Gorditas
  1. In a mixing bowl, combine 3 cups of Maseca masa harina with a good pinch of salt.
  2. Gradually pour in about 2 ¼ cups of water while mixing with your hands.
  3. Divide the dough into 12 equal portions, shaping each into a small ball.
  4. Preheat a comal or skillet over medium-high heat.
  5. Roll each dough portion into a ball and then flatten it between two plastic sheets.
  6. Place each gordita on the hot griddle and cook for about 1-2 minutes on each side.
  7. Immediately cut a slit in each cooked gordita while they are still warm.
  8. Fill each gordita with your desired fillings and serve.
