- Preheat the oven to 375°F (190°C) and prepare your loaf pan by greasing it or lining it with parchment paper.
- Sauté chopped onion and minced garlic in olive oil over medium heat until translucent, about 5 minutes.
- Combine ground beef, breadcrumbs, sautéed onion and garlic, beaten eggs, milk, Worcestershire sauce, Dijon mustard, ketchup, salt, black pepper, smoked paprika, and parsley in a large bowl.
- Transfer the mixture into your prepared loaf pan, shaping it into a uniform loaf.
- For the glaze: whisk together ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and vinegar until smooth. Spread over the top of the meatloaf.
- Bake the meatloaf uncovered for 45 minutes, then brush with more glaze and continue baking for an additional 15 minutes.
- Let rest for 10 minutes before slicing and serving.
