Ingredients
  

For the Meatloaf
  • 1 lb Ground Beef or ground turkey for a lighter option
  • 1 cup Breadcrumbs or gluten-free oatmeal
  • 1 medium Onion (finely chopped) shallots can be used
  • 2 cloves Garlic (minced) use fresh for better taste
  • 2 large Beaten Eggs flax eggs for vegan option
  • 1/2 cup Milk or plant-based milk
  • 2 tbsp Worcestershire Sauce soy sauce for gluten-free
  • 1 tbsp Dijon Mustard yellow mustard can substitute
  • 1/2 cup Ketchup low-sugar versions can be used
  • 1 tsp Salt adjust to taste
  • 1/2 tsp Black Pepper adjust to taste
  • 1 tsp Smoked Paprika regular paprika also works
  • 1/4 cup Fresh Parsley optional for garnish
For the Glaze
  • 1/2 cup Ketchup combine with brown sugar
  • 2 tbsp Brown Sugar reduce for less sugar
  • 1 tbsp Dijon Mustard adds zing
  • 1 tbsp Worcestershire Sauce balances sweetness
  • 1 tbsp Vinegar apple cider or white vinegar

Method
 

Directions
  1. Preheat the oven to 375°F (190°C) and prepare your loaf pan by greasing it or lining it with parchment paper.
  2. Sauté chopped onion and minced garlic in olive oil over medium heat until translucent, about 5 minutes.
  3. Combine ground beef, breadcrumbs, sautéed onion and garlic, beaten eggs, milk, Worcestershire sauce, Dijon mustard, ketchup, salt, black pepper, smoked paprika, and parsley in a large bowl.
  4. Transfer the mixture into your prepared loaf pan, shaping it into a uniform loaf.
  5. For the glaze: whisk together ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and vinegar until smooth. Spread over the top of the meatloaf.
  6. Bake the meatloaf uncovered for 45 minutes, then brush with more glaze and continue baking for an additional 15 minutes.
  7. Let rest for 10 minutes before slicing and serving.
