Ingredients
  

For the Salad
  • 8 oz Macaroni Noodles Cook until al dente.
  • 1 cup Sweet Gherkins Finely diced; dill pickles can be a substitute.
  • 1 each Red Bell Pepper Finely diced; yellow or orange peppers are alternatives.
  • 1 stalk Celery Finely diced; green onions can be used in place.
  • 1 each Red Onion Finely diced; green onions for a milder flavor.
  • 3 each Hard-Boiled Eggs Or substitute with tofu for a vegan version.
For the Dressing
  • 1 cup Mayonnaise Use vegan mayonnaise for a dairy-free version.
  • 1/2 cup Sour Cream Greek yogurt can be an alternative.
  • 1/4 cup Sweet Pickle Juice Lemon juice is a zesty substitute.
  • 2 tbsp Red Wine Vinegar White wine or apple cider vinegar are good substitutes.
  • 2 tbsp Sugar Reduce for a less sweet option.
  • 1 tbsp Dijon Mustard Yellow mustard for a milder taste.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Black Pepper Adjust to taste.
  • 1 tsp Garlic Powder Fresh garlic can be used, adjust amount.
  • 1/4 tsp Crushed Red Pepper Omit for a milder salad.

Method
 

Preparation
  1. Boil macaroni noodles in salted water for about 8-10 minutes until al dente. Drain, rinse with cold water, and toss with olive oil.
  2. Finely dice sweet gherkins, red bell pepper, celery, red onion, and hard-boiled eggs.
Dressing
  1. In a mixing bowl, whisk together mayonnaise, sour cream, sweet pickle juice, red wine vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until smooth.
Combine
  1. In a large bowl, mix the cooled macaroni, diced vegetables, and the dressing thoroughly.
  2. Cover the salad and refrigerate for at least 1 hour.
Serve
  1. Garnish with fresh parsley or dill if desired.
