Cooking Instructions
- Start by warming up 1 tablespoon of canola or vegetable oil in a pan over medium heat.
- Add in 1 pound of jumbo shrimp, arranging them in a single layer. Cook for 2-3 minutes on each side.
- While the shrimp are cooking, whisk together 1/3 cup of light mayo, 3 tablespoons of sweet chili sauce, and 2 teaspoons of sriracha.
- Once the shrimp are done, remove them from the pan and immediately toss them in the prepared sauce.
- Finally, sprinkle some chopped scallions over the shrimp for a fresh finish.
