- In a large bowl, combine olive oil, garlic powder, paprika, cayenne pepper, salt, and pepper. Toss the large shrimp in this mixture and let them marinate for about 10 minutes.
- In your blender, add diced ripe mango, fresh lime juice, chopped jalapeño, honey (if using), and a pinch of salt. Blend until smooth to create the coulis.
- Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
- Carefully thread the marinated shrimp onto skewers, leaving space between each for even cooking.
- Grill the skewers for 2-3 minutes on each side or until the shrimp turns opaque with charred lines.
- Brush the shrimp with the spicy mango lime coulis during the last minute of grilling.
- Remove the skewers and let them rest for a minute. Serve with extra coulis on the side.
