Ingredients
  

For the Shrimp
  • 1 lb Large Shrimp peeled and deveined
  • 2 tbsp Olive Oil substitute with avocado oil if desired
  • 1 tsp Garlic Powder or fresh minced garlic for more flavor
  • 1 tsp Paprika smoked paprika for extra depth
  • 1/2 tsp Cayenne Pepper adjust to taste
  • 1 tsp Salt sea salt or pink Himalayan salt recommended
  • 1/2 tsp Black Pepper
For the Spicy Mango Lime Coulis
  • 1 cup Ripe Mango diced
  • 2 tbsp Lime Juice freshly squeezed
  • 1 small Jalapeño Pepper chopped, adjust for heat
  • 1 tbsp Honey optional, can substitute with agave or maple syrup

Method
 

Preparation
  1. In a large bowl, combine olive oil, garlic powder, paprika, cayenne pepper, salt, and pepper. Toss the large shrimp in this mixture and let them marinate for about 10 minutes.
  2. In your blender, add diced ripe mango, fresh lime juice, chopped jalapeño, honey (if using), and a pinch of salt. Blend until smooth to create the coulis.
  3. Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
  4. Carefully thread the marinated shrimp onto skewers, leaving space between each for even cooking.
  5. Grill the skewers for 2-3 minutes on each side or until the shrimp turns opaque with charred lines.
  6. Brush the shrimp with the spicy mango lime coulis during the last minute of grilling.
  7. Remove the skewers and let them rest for a minute. Serve with extra coulis on the side.
