Ingredients
  

For the Pasta
  • 8 ounces Rotini Pasta or any preferred pasta shape like penne or fusilli.
For the Meats
  • 1 cup Oven Roasted Turkey or deli turkey for convenience.
  • 1/2 cup Pepperoni can substitute with any dry salami.
  • 1/2 cup Salami or prosciutto for a lighter alternative.
For the Cheeses
  • 1 cup Provolone Cheese or mozzarella or gouda.
  • 1/2 cup Parmesan Cheese or Grana Padano.
For the Fresh Veggies
  • 2 cups Iceberg Lettuce or romaine lettuce.
  • 1 cup Cherry Tomatoes diced regular tomatoes can be used.
  • 1/2 cup Pepperoncinis banana peppers can replace them.
  • 1/4 cup Red Onion green onions can be used for milder taste.
For the Dressing
  • 1 cup Mayonnaise or Greek yogurt for lighter version.
  • 2 tablespoons Red Wine Vinegar or apple cider vinegar.
  • 2 tablespoons Pepperoncini Juice or additional vinegar.
  • 1 teaspoon Dried Oregano or Italian seasoning.
  • 1 clove Garlic (grated) or garlic powder.

Method
 

How to Make Grinder Pasta Salad
  1. In a medium-sized bowl, whisk together mayonnaise, red wine vinegar, pepperoncini juice, dried oregano, grated garlic, salt, and black pepper until smooth. Chill in the fridge until you're ready to mix it with the salad.
  2. Boil rotini pasta in salted water for 9-10 minutes, or until al dente. Drain and rinse under cold water to cool.
  3. In a large bowl, add the cooled pasta along with diced turkey, sliced pepperoni, salami, provolone, parmesan, chopped lettuce, halved tomatoes, sliced pepperoncinis, and red onion. Mix gently to combine.
  4. Pour the prepared dressing over the salad mixture and toss gently until everything is evenly coated. Refrigerate for at least 2 hours.
