How to Make Chickpea Meatless Loaf
- In a bowl, mix the mashed chickpeas, egg (or flax egg), breadcrumbs, chopped onion, and minced garlic. Stir in the dried thyme, smoked paprika, salt, and black pepper until everything is well incorporated.
- Transfer the mixture onto a clean surface and shape it into a loaf, ensuring it holds together well. If it’s too crumbly, add a bit more egg or a splash of water to bind it.
- Set your oven to 350°F (175°C) and let it preheat while you prepare the glaze.
- Line a baking sheet with parchment paper or lightly grease it. Place your formed chickpea loaf onto the sheet.
- In a separate bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, and Dijon mustard until smooth.
- Brush the prepared glaze generously over the top of the loaf.
- Place the baking sheet in the preheated oven and bake for about 40-45 minutes, or until the loaf is firm and golden on top.
