  • 1 small yellow onion finely chopped
  • 2 cloves garlic minced

  • 1/2 tsp smoked paprika
  • Kosher salt to taste

  • 120 ml ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard

How to Make Chickpea Meatless Loaf
  1. In a bowl, mix the mashed chickpeas, egg (or flax egg), breadcrumbs, chopped onion, and minced garlic. Stir in the dried thyme, smoked paprika, salt, and black pepper until everything is well incorporated.
  2. Transfer the mixture onto a clean surface and shape it into a loaf, ensuring it holds together well. If it’s too crumbly, add a bit more egg or a splash of water to bind it.
  3. Set your oven to 350°F (175°C) and let it preheat while you prepare the glaze.
  4. Line a baking sheet with parchment paper or lightly grease it. Place your formed chickpea loaf onto the sheet.
  5. In a separate bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, and Dijon mustard until smooth.
  6. Brush the prepared glaze generously over the top of the loaf.
  7. Place the baking sheet in the preheated oven and bake for about 40-45 minutes, or until the loaf is firm and golden on top.
