Ingredients

For the Soup Base
  • 2 oz Pork Bones Provides deep flavor; substitute with a whole chicken or pork ribs, or use 1.5 chicken stock cubes instead.
  • 6 cups Water Serves as the base for the soup; adjust with additional water as needed during simmering.
For the Vegetables
  • 2-3 Waxy Potatoes Halved or cubed; size can be adjusted based on personal preference.
  • 3-4 Tomatoes Cut into wedges; cherry tomatoes can also be used for an extra pop of flavor.
  • 1 Carrot Cut into rounds; choose to peel or keep the skin for more nutrients.
  • 2 Corn on the Cob Cut into 3-4 pieces; ensure pieces are adequately sized to fit in the bowl.
For Seasoning
  • 1.5 teaspoons Salt Enhances overall flavor; add toward the end to prevent oversalting.
  • 1 teaspoon White Pepper Optional; introduces a mild heat; adjust to taste gradually.

Equipment

  • pot
  • knife
  • cutting board

Method

How to Make Chinese ABC Soup
  1. Blanch the meat. Start by placing the pork bones in a pot filled with cold water. Boil them briefly to remove impurities, then discard the dirty water for a clearer broth.
  2. Combine ingredients. In a fresh pot, add the blanched meat along with 6 cups of clean water. Bring everything to a rolling boil.
  3. Simmer soup. Once it reaches a boil, gently add in the potatoes, tomatoes, carrot, and corn. Lower the heat and let it simmer for about 45-60 minutes.
  4. Season. Before serving, take a taste. Adjust the seasoning with salt and pepper as needed.
