How to Make Italian Turkey Burger Soup
  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey, salt, pepper, onion, and garlic to the skillet. Sauté until browned, about 7-10 minutes.
  3. Transfer the turkey mixture to a Dutch oven or large pot.
  4. Sauté carrots and celery in the same skillet until slightly tender, about 3-5 minutes, then transfer to the pot with turkey.
  5. Add diced tomatoes to the skillet to deglaze, then pour in beef broth, tomato paste, and herbs (except parsley). Bring to a boil.
  6. Transfer mixture to Dutch oven and reduce heat to low. Simmer for 30-40 minutes.
  7. In the last 5-10 minutes, stir in fresh parsley and adjust seasoning to taste.
