  • 2 medium Carrots Finely chopped.
  • 2 sticks Celery Diced.
  • 2 cups Beef Broth For extra moisture and richness.
For the Mashed Potatoes
  • 1 cup Parmesan Cheese Freshly grated.
  • 4 tablespoons Butter Unsalted.
  • 1 cup Milk or Cream Adjust based on desired creaminess.

Method
 

How to Make Rib Ragu with Parmesan Mashed Potatoes
  1. Season the short ribs with salt and brown them in a large pot over medium-high heat. Remove and set aside.
  2. In the same pot, add chopped onions, minced garlic, diced carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in crushed tomatoes and beef broth, then return the browned short ribs to the pot.
  4. Cover and let it simmer on low heat for 3-4 hours until fork-tender.
  5. In a separate pot, boil peeled potatoes until fork-tender. Drain and mash with unsalted butter, milk or cream, and Parmesan until creamy.
  6. Plate the Rib Ragu over the creamy Parmesan mashed potatoes.
