  • 1 pound ground beef feel free to substitute with ground turkey for a lighter option.
  • 1 small green pepper, chopped red or yellow peppers work beautifully as alternatives!
  • 1/3 cup chopped onion shallots can be used for a milder taste.
  • 3-1/4 cups uncooked medium egg noodles the heart of your casserole.
  • 1 can (14-1/2 ounces) diced tomatoes, undrained use fresh tomatoes if you have them on hand!
  • 1-1/2 cups water broth can be used for extra flavor.
  • 1/4 cup chili sauce adjust based on your spice preference or use salsa for a twist.
  • 1/4 teaspoon salt remember to taste and adjust as needed.
  • 1/8 teaspoon pepper consider fresh ground pepper for a stronger flavor.
  • 4 strips bacon, cooked and crumbled the smoky finish that takes this casserole over the top!

Instructions
  1. In a large skillet, cook the ground beef, green pepper, and onion over medium heat. Stir until the meat is no longer pink, about 5-7 minutes. Drain off any excess fat.
  2. Stir in the uncooked egg noodles, diced tomatoes (with their juices), water, chili sauce, salt, and pepper. Mix well to combine all the flavors.
  3. Bring the mixture to a boil. Once boiling, reduce the heat, cover, and simmer for 20-25 minutes. Stir occasionally until the noodles are tender and have absorbed the flavors.
  4. Just before serving, gently stir in the crumbled bacon. This adds a delicious, smoky crunch to your casserole.
