- Preheat your oven to 350°F (175°C) and grease an 8 x 5 inch loaf pan or line it with parchment paper for easy removal.
 - In a small bowl, whisk together ½ cup of brown sugar and 1 teaspoon of ground cinnamon, then set aside to create your delightful swirl.
 - In a large mixing bowl, whisk together 2 large eggs and ½ cup of granulated sugar until fully combined and creamy.
 - Stir in ½ cup of melted butter and 1 teaspoon of vanilla extract until the mixture is smooth and lovely.
 - Add 1 ½ cups of all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ¼ teaspoon of salt to the wet mix. Stir gently until just combined; the batter will be thick.
 - Gently fold in 2 cups of chopped apples, ensuring they are evenly distributed throughout the batter.
 - Pour half of the batter into the prepared loaf pan, followed by sprinkling three-quarters of your cinnamon sugar mixture over the top.
 - Spread the remaining batter over the cinnamon sugar and top it with the remaining sugar mixture. Use a knife to gently swirl for that beautiful cinnamon effect.
 - Place your loaf in the oven and bake for 35-45 minutes. It’s done when golden brown and a toothpick inserted in the center comes out clean (use foil if browning too quickly).
 - Allow the bread to cool completely in the pan before slicing to let those flavors set and the bread maintain its delicious moisture.
