How to Make Herb Crusted Pork Loin
- Preheat the oven to 375°F (190°C) to ensure an even cook throughout the pork.
- Pat dry the pork loin with paper towels, then rub it with olive oil, salt, and black pepper.
- Combine panko breadcrumbs, parsley, rosemary, thyme, and garlic in a bowl. Press this mixture onto the pork loin.
- Roast the pork loin in a pan for 20 minutes to start the browning process.
- Whisk together apple cider, Dijon mustard, and honey. Simmer for about 5 minutes until the glaze thickens.
- Brush half of the glaze over the pork and return it to the oven.
- Continue roasting for an additional 20-30 minutes or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let the pork rest for 10 minutes before slicing.
