Ingredients
  

For the Pork
  • 3 pounds Pork Loin boneless roast
For the Herb Crust
  • 1 cup Panko Breadcrumbs can swap with regular breadcrumbs
  • 1/4 cup Fresh Parsley finely chopped; sub with 1 tablespoon dried
  • 2 tablespoons Fresh Rosemary finely chopped; use 2 teaspoons dried instead
  • 1 tablespoon Fresh Thyme finely chopped; can use 1 teaspoon dried
  • 2 cloves Garlic minced; can use pre-minced for convenience
For the Glaze
  • 1/2 cup Apple Cider can substitute with apple juice or chicken broth
  • 2 tablespoons Dijon Mustard can use honey mustard
  • 1 tablespoon Honey adjust according to taste
For Cooking
  • 2 tablespoons Olive Oil can swap with melted butter
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

How to Make Herb Crusted Pork Loin
  1. Preheat the oven to 375°F (190°C) to ensure an even cook throughout the pork.
  2. Pat dry the pork loin with paper towels, then rub it with olive oil, salt, and black pepper.
  3. Combine panko breadcrumbs, parsley, rosemary, thyme, and garlic in a bowl. Press this mixture onto the pork loin.
  4. Roast the pork loin in a pan for 20 minutes to start the browning process.
  5. Whisk together apple cider, Dijon mustard, and honey. Simmer for about 5 minutes until the glaze thickens.
  6. Brush half of the glaze over the pork and return it to the oven.
  7. Continue roasting for an additional 20-30 minutes or until the internal temperature reaches 145°F (63°C).
  8. Remove from the oven and let the pork rest for 10 minutes before slicing.
