Ingredients
  

For the Base
  • 2 cups Sweet Potato peeled and diced
  • 1 tablespoon Avocado Oil or olive oil
  • 1 teaspoon Sea Salt
For the Protein
  • 1 pound Ground Chicken or ground turkey/beef/pork
For Flavor
  • 1 teaspoon Sweet Paprika optional
  • 1 teaspoon Dried Thyme or fresh thyme/Italian seasoning
  • 1 teaspoon Garlic Powder or 2-3 cloves of minced garlic
  • 1/2 teaspoon Red Pepper Flakes to taste
For the Veggies
  • 1 medium Onion or shallots/leeks
  • 1 medium Red Bell Pepper or yellow/green peppers
  • 2 cups Baby Spinach or kale/Swiss chard
For the Binding
  • 6 Large Eggs or egg substitutes
  • 1/2 cup Milk or almond milk
For the Topping
  • 1 cup Cheddar Cheese shredded, optional

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Grease a 9x13 baking dish.
  2. Toss the sweet potato with 1 tablespoon of avocado oil, salt, and pepper. Spread the mixture onto a baking sheet and roast for 20 minutes.
  3. Cook the ground chicken in a skillet over medium heat. Add the sweet paprika, dried thyme, garlic powder, and red pepper flakes, cooking until browned.
  4. Sauté the onion and bell pepper in the remaining oil until softened. Stir in the baby spinach and cook until wilted.
  5. Whisk together the eggs, milk, and the remaining salt and pepper in a bowl. Pour this mixture over the chicken and veggies.
  6. Top with shredded cheddar cheese and bake at 350°F (175°C) for 30-35 minutes until set.
  7. Let it rest for 10 minutes before serving.
