Ingredients
  

For the Pizza Base
  • 8 pieces Flour Tortillas You can use corn tortillas for a different flavor.
For the Filling
  • 1 lb Ground Beef Can be substituted with ground turkey, chicken, or a plant-based alternative.
  • 2 tbsp Taco Seasoning Use store-bought or homemade based on your spice preference.
  • 0.25 cup Water To hydrate the taco seasoning and ground beef.
  • 8 oz Refried Beans Substitute with black or pinto beans for variety.
For the Topping
  • 8 tbsp Enchilada Sauce Mild or hot based on your family’s taste.
  • 1 cup Shredded Cheese Use a Mexican cheese blend or cheddar or mozzarella.
For Garnishes (Optional)
  • Tomato Diced tomatoes work well.
  • Red Onion Use sparingly unless you love the flavor!
  • Black Olives Slice them up for even distribution.
  • Sour Cream Dollop just before serving.
  • Green Onions Chop finely to sprinkle on top.

Method
 

How to Make Mexican Pizza
  1. Preheat your oven to 400°F (200°C) for a crispy finish.
  2. Brush the flour tortillas with oil, arrange on a baking sheet, and bake for 8-10 minutes until golden brown.
  3. Brown the ground beef over medium heat for 6-8 minutes, then drain fat, add taco seasoning and water, and simmer for 2-3 minutes.
  4. Heat the refried beans in a saucepan over low heat until spreadable, adding water if necessary.
  5. Spread warm refried beans on 4 crispy tortillas, layer with seasoned beef, 4 tablespoons of enchilada sauce, and half of the cheese.
  6. Place remaining tortillas on top, drizzle with remaining enchilada sauce, and sprinkle remaining cheese.
  7. Bake for an additional 5-7 minutes until cheese is melted and bubbling.
  8. Let cool for a couple of minutes, top with garnishes, and slice into wedges to serve.
