Ingredients
  

For the Tortillas
  • 4 pieces Flour Tortillas or corn tortillas for a gluten-free option
For the Beef Layer
  • 1 pound Ground Beef or ground turkey for a lighter version
  • 1 packet Taco Seasoning homemade or store-bought
  • 1/2 cup Water
For the Assembly
  • 1 cup Enchilada Sauce green or red sauce
  • 1 can Refried Beans black or pinto beans can be substituted
  • 1 cup Shredded Cheese use a blend or dairy-free cheese
  • 1 piece Tomato chopped
  • 1/2 cup Red Onion or green onions for a milder flavor
  • 1/4 cup Black Olives omit if preferred
For Topping
  • 1/2 cup Sour Cream or Greek yogurt
  • 1/4 cup Green Onions for garnish

Method
 

How to Make Mexican Pizza
  1. Preheat your oven to 400°F (200°C).
  2. Lightly brush both sides of your flour tortillas with oil and bake for 8-10 minutes until golden and crispy.
  3. In a skillet, brown the ground beef for about 6-8 minutes, drain excess fat, add taco seasoning and water, and simmer until absorbed.
  4. Heat refried beans in a small saucepan over low heat until smooth.
  5. Spread a layer of refried beans, seasoned beef, enchilada sauce, and shredded cheese on four crispy tortillas.
  6. Top with remaining tortillas, spread more enchilada sauce, and add an extra layer of cheese.
  7. Bake for 5-7 minutes until cheese is melted and bubbly.
  8. Let cool for a minute, slice into wedges, and top with diced tomatoes, red onion, black olives, and sour cream.
