How to Make Mexican Pizza
- Preheat your oven to 400°F (200°C).
- Lightly brush both sides of your flour tortillas with oil and bake for 8-10 minutes until golden and crispy.
- In a skillet, brown the ground beef for about 6-8 minutes, drain excess fat, add taco seasoning and water, and simmer until absorbed.
- Heat refried beans in a small saucepan over low heat until smooth.
- Spread a layer of refried beans, seasoned beef, enchilada sauce, and shredded cheese on four crispy tortillas.
- Top with remaining tortillas, spread more enchilada sauce, and add an extra layer of cheese.
- Bake for 5-7 minutes until cheese is melted and bubbly.
- Let cool for a minute, slice into wedges, and top with diced tomatoes, red onion, black olives, and sour cream.
