Method
 

Directions
  1. Start by preparing your water bath canner and sterilizing your mason jars to ensure your peach butter stays fresh and safe.
  2. Boil your peaches for 30-60 seconds and transfer them immediately into an ice water bath.
  3. Cut the blanched peaches in half, remove the pits, and chop them. Cook with water, lemon juice, and zest for about 20 minutes.
  4. Purée the cooked peaches until smooth.
  5. Return peach purée to the pot and stir in the sugar until it dissolves.
  6. Bring the mixture to a boil, reduce heat, and cook until it thickens, around 30-45 minutes.
  7. Ladle the hot peach butter into prepared jars, leaving about 1/4 inch of headspace.
  8. Process the jars in a boiling water bath for 10 minutes.
