- Start by preparing your water bath canner and sterilizing your mason jars to ensure your peach butter stays fresh and safe.
- Boil your peaches for 30-60 seconds and transfer them immediately into an ice water bath.
- Cut the blanched peaches in half, remove the pits, and chop them. Cook with water, lemon juice, and zest for about 20 minutes.
- Purée the cooked peaches until smooth.
- Return peach purée to the pot and stir in the sugar until it dissolves.
- Bring the mixture to a boil, reduce heat, and cook until it thickens, around 30-45 minutes.
- Ladle the hot peach butter into prepared jars, leaving about 1/4 inch of headspace.
- Process the jars in a boiling water bath for 10 minutes.
