For Frying
  • 2 cups Vegetable Oil or canola oil
For Garnishing
  • 1 cup Pineapple Chunks for authentic taste

Method
 

Preparation Steps
  1. Cut the pork tenderloin into 1" cubes and season with salt and pepper.
  2. Prepare two shallow bowls – one with whisked eggs and the other with cornstarch.
  3. In a bowl, whisk together chili sauce, chicken stock, sugar, vinegar, Worcestershire sauce, minced garlic, and red chili flakes.
  4. In a deep frying pan, heat vegetable oil over medium-low heat.
  5. Dip each cube of pork into the egg mixture first, then roll it in cornstarch, and fry them in batches.
  6. Arrange fried pork in a baking dish, add pineapple chunks and sauce, and mix gently.
  7. Bake at 375°F for 45 minutes, serve over rice or veggies.
