  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1/2 cup cornstarch for coating
Batter

  • 1 large egg

  • 1 tablespoon oil for frying
For Frying
  • 1.5 liters oil (for frying) ensure the chicken cooks thoroughly
Sauce
  • 1 teaspoon chili flakes
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced fresh
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup orange juice freshly squeezed
  • 1 tablespoon white distilled vinegar
  • 1 tablespoon soy sauce
  • 1/4 cup water
  • 1 tablespoon cornstarch for thickening
  • 1 teaspoon sesame oil

Method
 

Cooking Instructions
  1. Season the chicken thighs with salt and white pepper. Coat them with cornstarch for that perfect crunch.
  2. In a bowl, combine flour and water to create a smooth batter. Dip the coated chicken into the mixture.
  3. Heat 1.5L of oil in a pan over medium-high heat. Fry the chicken until golden brown, about 5-7 minutes.
  4. In another pan, heat 1 tablespoon of oil over medium heat. Sauté chili flakes, garlic, and ginger until fragrant.
  5. Add brown sugar, regular sugar, orange juice, vinegar, soy sauce, and water to the sautéed aromatics. Stir in cornstarch and sesame oil, then cook until thickened.
  6. Toss the fried chicken in the orange sauce until evenly coated.
