- Season the chicken thighs with salt and white pepper. Coat them with cornstarch for that perfect crunch.
- In a bowl, combine flour and water to create a smooth batter. Dip the coated chicken into the mixture.
- Heat 1.5L of oil in a pan over medium-high heat. Fry the chicken until golden brown, about 5-7 minutes.
- In another pan, heat 1 tablespoon of oil over medium heat. Sauté chili flakes, garlic, and ginger until fragrant.
- Add brown sugar, regular sugar, orange juice, vinegar, soy sauce, and water to the sautéed aromatics. Stir in cornstarch and sesame oil, then cook until thickened.
- Toss the fried chicken in the orange sauce until evenly coated.
