Preparation

  3. Whisk wet ingredients: In another bowl, whisk together buttermilk, eggs, and melted butter until smooth.
  4. Combine mixtures: Gently fold the wet ingredients into the dry ingredients, stirring just until combined.
  5. Add corn and cheese: Fold in sweet corn kernels and shredded cheddar cheese.
  6. Fill muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake poppers: Place the muffin tin in the oven and bake for 12-15 minutes until golden brown.
  8. Drizzle honey butter: Mix softened butter with honey until creamy and drizzle over warm poppers.
