  • 1 tablespoon Sriracha adjust to heat preference
For the Bowl
  • 2 cups Cooked Brown Rice or quinoa/cauiflower rice for low-carb
  • 1 medium Avocado chopped
  • 1 medium Diced Cucumber or zucchini as alternative
For the Dressing and Sauce
  • 2 tablespoons Olive Oil for cucumber salad dressing
  • 1/4 cup Cilantro chopped
  • 2 tablespoons Fresh Lime Juice or lemon juice
  • 1/4 cup Light Mayo or Greek yogurt
  • 1 teaspoon Paprika smoked paprika for depth
  • 1 teaspoon Cumin optional

Method
 

Directions
  1. Preheat your oven to 425°F.
  2. Toss the cubed salmon with avocado oil, honey, soy sauce, and sriracha in a bowl.
  3. Spread the salmon cubes on a baking sheet. Roast for about 10 minutes, then switch to broil for 2-3 minutes until crisp.
  4. Whisk together light mayo, paprika, cumin, lime juice, and honey for the sauce.
  5. Combine avocado, cucumber, olive oil, cilantro, and lime juice in a bowl, and toss gently.
  6. Layer cooked brown rice, roasted salmon, and cucumber salad in bowls, drizzled with sauce.
