Cooking Steps
  1. Prepare Potatoes: Start by boiling quartered baby potatoes in salted water for about 8 minutes. Drain and set aside.
  2. Season Pork Chops: Pat the pork chops dry and season both sides with salt and pepper.
  3. Make Glaze: In a bowl, mix together honey, Dijon mustard, paprika, and lemon juice until smooth.
  4. Cook Potatoes: In a skillet, melt butter and oil, add potatoes and cook until golden brown, about 8-10 minutes.
  5. Cook Pork Chops: In the same skillet, add seasoned pork chops and cook for 3–4 minutes on each side.
  6. Combine Ingredients: Pour the honey mustard sauce into the skillet, add potatoes, and toss to coat.
  7. Serve: Garnish with freshly chopped parsley and serve immediately.
