For the Dressing
  • 1/4 cup Olive Oil Extra virgin for richness.
  • 2 tablespoons Red Wine Vinegar Adds brightness.
  • 1 tablespoon Dijon Mustard For a tangy kick.
  • 2 cloves Garlic Minced.
  • 1/2 teaspoon Salt Adjust to taste.

Method
 

Instructions
  1. Cook the pasta: Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside to cool.

  3. Combine ingredients: In a large bowl, toss together the cooled pasta, veggies, Kalamata olives, feta cheese, and herbs.
  4. Prepare the dressing: Whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper in a separate bowl.
  5. Dress the salad: Pour the dressing over the salad mixture and toss to coat. Let it sit for a few minutes to meld flavors.
