  • 4 cups Mixed Nuts (Cashews, Pecans, Almonds, Walnuts) Feel free to swap in your favorite nuts.
For the Caramel
  • 1 cup Granulated Sugar Using organic sugar can elevate the flavor profile.
  • 1 teaspoon Vanilla Extract Almond extract can be used for a twist.
  • 1 teaspoon Fleur de Sel (or Sea Salt) Regular salt can be used if necessary.
  • 1/4 cup Water Essential for dissolving the sugar.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Spread mixed nuts on a parchment-lined sheet pan and roast for about 10 minutes.
  3. In a nonstick skillet, mix granulated sugar and water over medium heat, stirring occasionally for about 6 minutes.
  4. Once melted, swirl the pan and let it cook for around 12 minutes until golden brown.
  5. Remove from heat and stir in the vanilla extract carefully.
  6. Toss the roasted nuts into the caramel mixture and sprinkle in the fleur de sel, combining well.
  7. Transfer the nut mixture to a parchment-lined sheet pan, break into clusters, and allow to cool completely.
