Preparation Steps
- Preheat your oven to 350°F (175°C).
- Spread mixed nuts on a parchment-lined sheet pan and roast for about 10 minutes.
- In a nonstick skillet, mix granulated sugar and water over medium heat, stirring occasionally for about 6 minutes.
- Once melted, swirl the pan and let it cook for around 12 minutes until golden brown.
- Remove from heat and stir in the vanilla extract carefully.
- Toss the roasted nuts into the caramel mixture and sprinkle in the fleur de sel, combining well.
- Transfer the nut mixture to a parchment-lined sheet pan, break into clusters, and allow to cool completely.
