Ingredients
  

For the Casserole
  • 1 lb bacon cut into 1/2-inch strips
  • 1 medium yellow onion diced finely
  • 1 medium red bell pepper seeds removed and diced
  • 3 cloves garlic minced
  • 12 large eggs providing richness and structure
  • 1 cup milk adds creaminess
  • 3 cups frozen diced potatoes no need to thaw
  • 2 cups shredded cheddar cheese divided
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 medium green onions chopped

Method
 

Cooking Instructions
  1. In a large skillet, cook the bacon over medium heat until it’s crisp and golden, about 8-10 minutes. Remove the bacon and drain on paper towels.
  2. In the same skillet, add the diced onion, red bell pepper, and minced garlic. Sauté for about 5 minutes or until softened.
  3. In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  4. Add frozen diced potatoes, cooked bacon, sautéed vegetables, and 1 cup of cheddar cheese to the egg mixture and stir gently.
  5. Pour the mixture into a greased baking dish and top with remaining cheddar cheese.
  6. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes until set and golden brown.
  7. Let cool for 5-10 minutes before serving. Garnish with chopped green onions.
