  • 1 batch Basic Pie Dough
For the Filling
  • 4 cups Fresh blackberries
  • 1 cup Sugar can use brown sugar for deeper flavor
  • 1 teaspoon Lemon zest
  • 1 teaspoon Pure vanilla extract
  • 1/4 teaspoon Kosher salt
  • 3 tablespoons Corn starch
For the Cream Layer
  • 2 cups Sour cream
  • 3 large Eggs use room-temperature eggs
  • 2 tablespoons Additional sugar

Method
 

Preparation
  1. Preheat the oven to the temperature specified in your Basic Pie Dough instructions.
  2. Roll out the Basic Pie Dough on a floured work surface until it’s about 1/8-inch thick. Carefully fit it into a pie pan, pressing gently against the bottom and sides.
  3. Combine the blackberries, 1 cup of sugar, lemon zest, vanilla extract, kosher salt, and corn starch in a large bowl. Toss gently until the berries are well coated.
  4. Pour the blackberry mixture into the prepared pie crust, spreading it evenly.
  5. Whisk together the sour cream, 2 tablespoons of sugar, and the remaining eggs and vanilla extract in another bowl.
  6. Spread the sour cream mixture over the blackberries in the pie, covering them completely.
  7. Bake according to your Basic Pie Dough instructions, until the filling is set and the top is golden brown.
