Preparation
- Preheat the oven to the temperature specified in your Basic Pie Dough instructions.
- Roll out the Basic Pie Dough on a floured work surface until it’s about 1/8-inch thick. Carefully fit it into a pie pan, pressing gently against the bottom and sides.
- Combine the blackberries, 1 cup of sugar, lemon zest, vanilla extract, kosher salt, and corn starch in a large bowl. Toss gently until the berries are well coated.
- Pour the blackberry mixture into the prepared pie crust, spreading it evenly.
- Whisk together the sour cream, 2 tablespoons of sugar, and the remaining eggs and vanilla extract in another bowl.
- Spread the sour cream mixture over the blackberries in the pie, covering them completely.
- Bake according to your Basic Pie Dough instructions, until the filling is set and the top is golden brown.
