Preparation Steps
- Preheat your oven to 400°F (200°C).
- Butter four oven-proof dessert dishes lightly and sprinkle each dish with 4 teaspoons of castor sugar.
- Divide ½ cup of fresh blueberries among each dish.
- Mix cream cheese, remaining castor sugar, flour, vanilla extract, and one egg until smooth in a stand mixer.
- Incorporate the remaining two eggs into the mixture and gradually add whole milk.
- Pour the batter over the blueberries, filling dishes about an inch from the top.
- Sprinkle lemon zest over the top of the batter and place the dishes on a baking sheet.
- Bake for 20 minutes or until golden brown and a toothpick comes out clean.
- Cool slightly before dusting with confectioners’ sugar and serving warm.
