For the Batter
  • 1 cup Fresh Blueberries Frozen can be used if thawed and drained.
  • 1/2 cup Castor Sugar Finer than regular sugar.
  • 8 oz Cream Cheese Ensure at room temperature.
  • 1 cup All-Purpose Flour
  • 1 tsp Vanilla Extract
  • 3 Eggs Use room temperature eggs.
  • 1 cup Whole Milk
For Garnishing
  • 2 tbsp Confectioners’ Sugar Optional for serving.
  • 1 tbsp Lemon Zest

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Butter four oven-proof dessert dishes lightly and sprinkle each dish with 4 teaspoons of castor sugar.
  3. Divide ½ cup of fresh blueberries among each dish.
  4. Mix cream cheese, remaining castor sugar, flour, vanilla extract, and one egg until smooth in a stand mixer.
  5. Incorporate the remaining two eggs into the mixture and gradually add whole milk.
  6. Pour the batter over the blueberries, filling dishes about an inch from the top.
  7. Sprinkle lemon zest over the top of the batter and place the dishes on a baking sheet.
  8. Bake for 20 minutes or until golden brown and a toothpick comes out clean.
  9. Cool slightly before dusting with confectioners’ sugar and serving warm.
