- Combine the blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and 1/4 cup of all-purpose flour in a mixing bowl. Toss gently until mixed, and set aside.
- In another bowl, mix the crumble topping ingredients: 1/2 cup of all-purpose flour, old-fashioned oats, brown sugar, granulated sugar, salt, and ground cinnamon until evenly combined.
- Add the diced cold butter into the crumble mixture and mix until crumbly with small pea-sized pieces of butter remaining.
- Layer the fruit mixture evenly in a baking dish and sprinkle the crumble topping generously over the fruit.
- Bake in a preheated oven at 350°F for about 30-35 minutes or until golden brown and bubbly.
