  • 2 cups refried beans can be canned or homemade
  • 1 cup sour cream can substitute with Greek yogurt
  • 1 cup cheddar cheese shredded, sharp or mild
  • 1 cup Monterey Jack cheese shredded, can use mozzarella as alternative
  • ¼ cup green onions chopped, or substitute with chives
  • ½ cup black olives sliced, optional
  • 1 cup diced tomatoes fresh or well-drained canned
  • ¼ cup chopped fresh cilantro omit if not preferred
  • 1 packet taco seasoning or mix of cumin and chili powder
  • 2 tablespoons lime juice fresh lime juice recommended
  • to taste salt adjust according to preference
  • 1 bag tortilla chips for serving, vegetable sticks can be an alternative

Method
 

How to Make
  1. Preheat your oven to 350°F (175°C).
  2. Combine the refried beans, sour cream, taco seasoning, lime juice, and salt in a mixing bowl. Blend until smooth.
  3. Spread the mixture evenly in a baking dish.
  4. Layer with cheddar and Monterey Jack cheeses, tomatoes, green onions, black olives, and cilantro.
  5. Bake for 20-25 minutes until the cheese is melted and bubbly.
  6. Cool for a few minutes before serving.
