Method
 

How to Make Entomatadas
  1. Preheat the oven to 400°F (200°C).
  2. Roast plum tomatoes on a baking sheet for 20-25 minutes, until soft and caramelized.
  3. Sauté chopped onion and minced garlic in a skillet with olive oil until golden brown, about 5-7 minutes.
  4. Blend the roasted tomatoes with sautéed onion, garlic, jalapeño, and salt until smooth.
  5. Simmer the blended sauce in a saucepan with olive oil for 5 minutes.
  6. Warm corn tortillas in the oven or fry them until pliable.
  7. Coat each tortilla with the sauce and fill with desired ingredients, rolling or folding them.
  8. Top the rolled entomatadas with additional sauce and sprinkle with Cotija cheese before serving.
