  • 1/4 cup Light Brown Sugar substitute with granulated sugar if desired
  • 2 teaspoons Cinnamon or pumpkin spice for variation
  • 2 large Eggs can use flax eggs for vegan option
  • 1/2 cup Milk any dairy or plant-based milk
  • 1 teaspoon Vanilla Extract
For the Icing
  • 4 ounces Cream Cheese softened
  • 1 cup Confectioners’ Sugar
  • 2 tablespoons Milk adjust for desired consistency

Method
 

Instructions
  1. In a medium bowl, combine softened butter, light brown sugar, and cinnamon until well-blended.
  2. Cut the crusts off each slice of bread. Use a rolling pin to flatten each slice slightly and spread the cinnamon butter mixture evenly before rolling up tightly.
  3. In another bowl, whisk together the eggs, milk, and vanilla extract until thoroughly combined.
  4. Lightly dip each roll into the egg mixture, ensuring they’re coated but not soaked.
  5. Melt a tablespoon of butter in a non-stick skillet over medium heat, and fry the rolls until golden brown on all sides, about 2-3 minutes per side.
  6. Mix together sugar and cinnamon in a separate bowl. Roll each warm roll in this mixture to coat completely.
  7. For the icing, mix softened cream cheese, confectioners' sugar, and a splash of milk until smooth. Drizzle over the warm roll-ups or serve as a dip.
