Method
 

Instructions
  1. Prepare the crust by fitting one sheet into a pie dish, ensuring it's pressed down evenly.
  2. Mix together in a large bowl the peeled and cored apples with lemon zest, lemon juice, brown sugar, granulated sugar, flour, salt, cinnamon, nutmeg, cardamom, and vanilla.
  3. Pour the apple mixture into the prepared pie crust, distributing it evenly.
  4. Cover the pie with the second sheet of pie dough, crimping the edges firmly.
  5. Brush the top crust with milk or beaten egg, and sprinkle raw sugar on top.
  6. Cut small slits in the top crust to allow steam to escape.
  7. Bake in a preheated oven at 425°F for about 45 minutes until the apples are tender and the crust is golden brown.
