Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a bowl by combining the all-purpose flour, baking soda, and kosher salt.
  3. Cream together the softened unsalted butter, light brown sugar, and creamy peanut butter until smooth.
  4. Beat in the large egg and pure vanilla extract until thoroughly combined.
  5. Gradually mix the dry ingredients into the peanut butter mixture until just combined.
  6. Roll the dough into 1 inch balls and then roll in sugar.
  7. Place the dough balls on a lined baking sheet and bake for 10-12 minutes.
  8. Blend the ingredients for the filling until smooth.
  9. Cool the cookies on a wire rack for about 10 minutes before sandwiching with the filling.
