  • 2 pounds beef stewing beef, chuck or brisket
  • 1 cup stout beer non-alcoholic option available
  • 2 medium onions yellow onions preferred
  • 2 medium carrots fresh diced
  • 1/4 cup flour gluten-free option works
  • 1 teaspoon herbs e.g., thyme, fresh or dried
  • to taste salt
  • to taste pepper
For the Crust
  • 1 package puff pastry store-bought recommended

Method
 

Preparation
  1. Cut beef into chunks, season generously with salt and pepper, and sear in a pot over medium-high heat until browned, about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté the chopped onions and diced carrots for about 5-7 minutes until softened.
  3. Add the browned beef back into the pot, sprinkle with flour, and pour in the stout. Stir well and let it simmer for 1.5 hours on low heat.
  4. Pour the savory filling into a baking dish. Cover with puff pastry, seal the edges tightly, and cut small vents on top.
  5. Preheat your oven to 400°F (200°C) and bake for 30-40 minutes, or until the pastry is golden brown.
