Ingredients
  

Dough
  • 3 cups all-purpose flour
  • 1 cup warm water
  • 1 tbsp granulated sugar
  • 1 tbsp instant yeast
  • 1 tsp salt
  • 1/4 cup olive oil
Filling
  • 2 tbsp olive oil for sautéing
  • 1 medium onion, diced
  • 1 lb ground beef
  • 2 medium Roma tomatoes, seeded and chopped
  • 1/4 cup chopped parsley
  • 1 tsp salt
  • 1 tsp 7 Spice
  • 1 tsp sumac
  • 1/2 tsp cinnamon

Method
 

Dough Preparation
  1. Combine the dough ingredients in a large mixing bowl: all-purpose flour, warm water, granulated sugar, instant yeast, salt, and olive oil. Stir until fully blended and there are no dry spots.
  2. Knead the mixture on a lightly floured surface for about 8-10 minutes, until the dough becomes smooth and elastic. Then, let it rise in a warm spot, covered, for approximately 1 hour or until doubled in size.
Filling Preparation
  1. Sauté the diced onion in a skillet with 2 tablespoons of olive oil over medium heat. Cook until it turns translucent, releasing a sweet aroma—about 3-4 minutes.
  2. Brown the ground beef in the same skillet, stirring occasionally until it’s fully cooked. This should take about 5-7 minutes.
  3. Mix in the chopped tomatoes, parsley, salt, 7 Spice, sumac, and cinnamon. Cook for an additional 3-4 minutes until everything is well combined and heated through.
Assembling and Baking
  1. Roll out the risen dough on a floured surface to about 1/8-inch thickness. Cut it into circles or desired shapes for filling.
  2. Fill each piece of dough with a generous portion of the meat mixture. Fold the dough over and seal the edges by pressing firmly; a fork can be handy for this!
  3. Bake the filled pies in a preheated oven at 400°F for 20-25 minutes, or until they’re golden brown and your kitchen is filled with mouthwatering aromas.
