How to Make Moist Meatloaf
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with foil and greasing it lightly.
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onions until tender, about 10 minutes. Set aside to cool.
  3. In a large bowl, combine ground beef, sautéed onions, bread crumbs, eggs, milk, salt, pepper, onion powder, garlic powder, Italian seasoning, half of the ketchup, Worcestershire sauce, and parsley. Stir gently to combine.
  4. Shape the mixture into a log on the baking sheet and flatten the top slightly.
  5. In a small bowl, mix remaining ketchup with brown sugar and spread over the top of the meatloaf.
  6. Cover loosely with foil and bake for 45 minutes to 1 hour, checking that the internal temperature reaches at least 160°F (70°C). Remove foil during the last 10-15 minutes for caramelization.
  7. Let the meatloaf rest for 10-15 minutes under foil before slicing. Garnish with additional parsley if desired.
