How to Make Chocolate Cheesecake
- Prepare the Crust: Crush Oreo cookies into fine crumbs. Mix in melted butter until resembling wet sand. Press into the bottom of a springform pan and chill in refrigerator for 30 minutes.
- Make the Filling: Melt semi-sweet or dark chocolate until smooth. Cool slightly. Beat cream cheese, powdered sugar, and vanilla until creamy. Fold in melted chocolate.
- Incorporate Whipped Cream: Whip heavy cream until stiff peaks form. Gently fold whipped cream into chocolate mixture in batches.
- Assemble and Chill: Spread filling over chilled crust, smooth top, cover with plastic wrap and refrigerate for at least 6 hours or overnight.
- Prepare Ganache: Heat heavy cream until steaming, pour over chopped chocolate. Let sit before stirring until smooth. Cool slightly before drizzling over cheesecake.
- Final Chill: Refrigerate for an additional 30-60 minutes to set ganache. Slice and serve.
