  • 1 package Puff Pastry Use store-bought for convenience.
For the Filling
  • 8 slices Ham Can substitute turkey or veggie bacon.
  • 1 cup Gruyère Cheese Substitute with Swiss cheese if needed.
  • 4 large Eggs Add extra eggs for more protein.
For the Seasoning
  • 1 teaspoon Kosher Salt Can use sea salt.
  • 1/2 teaspoon Ground Black Pepper Optional.
  • 2 tablespoons Chives Chopped, for garnish.

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry sheets on a floured surface and cut them into 4 squares. Place on parchment-lined baking sheets.
  3. Poke holes in each square with a fork and brush the edges with an egg wash.
  4. Top each square with slices of ham, leaving space for the egg, and sprinkle with Gruyère cheese.
  5. Bake for 10-15 minutes until the edges are golden and puffed.
  6. Remove from the oven, create a divot in the center of each square, crack an egg into it, and season lightly.
  7. Return to the oven and bake for another 10-15 minutes until egg whites are set and pastry is golden brown.
  8. Garnish with freshly chopped chives before serving.
