Preparation Steps
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry sheets on a floured surface and cut them into 4 squares. Place on parchment-lined baking sheets.
- Poke holes in each square with a fork and brush the edges with an egg wash.
- Top each square with slices of ham, leaving space for the egg, and sprinkle with Gruyère cheese.
- Bake for 10-15 minutes until the edges are golden and puffed.
- Remove from the oven, create a divot in the center of each square, crack an egg into it, and season lightly.
- Return to the oven and bake for another 10-15 minutes until egg whites are set and pastry is golden brown.
- Garnish with freshly chopped chives before serving.
