Baking Instructions
- Preheat the oven to 375°F (190°C) and line your muffin tins with cupcake liners.
- Mix the dry ingredients in a large bowl: combine flour, baking soda, salt, and cinnamon.
- Whisk together the wet ingredients in another bowl: pumpkin puree, eggs, and melted coconut oil.
- Combine wet and dry ingredients in one bowl gently.
- Fold in the shredded coconut.
- Scoop the muffin batter into the prepared liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool the muffins in the pan for a few minutes and then transfer to a wire rack.
