Ingredients
  

For the Milk Mixture
  • 2 cups Whole Milk
  • 1 cup Evaporated Milk Can substitute with extra whole milk
  • 6 pods Cardamom Pods Crushed lightly
  • 3/4 cup Sugar Adjust to taste
  • 1/4 teaspoon Saffron Strands Use sparingly
For the Syrup
  • 1 cup Sugar Fine sugar recommended
  • 1 cup Water
  • 1 tablespoon Rose Water Can substitute with orange blossom water
For the Bread
  • 8 slices Bread Slices White bread or brioche preferred

Method
 

Preparation
  1. In a saucepan, mix whole milk and evaporated milk. Simmer gently over medium heat.
  2. Add crushed cardamom pods and sugar. Lower heat and cook for about one hour, until reduced by half.
  3. Stir in saffron strands just before removing from heat.
  4. In another saucepan, mix sugar and water. Bring to a boil until syrup reaches one-thread consistency.
  5. Shallow fry bread slices in ghee or butter until crisp and golden-brown.
  6. Quickly dunk the fried bread in the sugar syrup and arrange on a serving platter.
  7. Pour the thickened milk over the soaked bread slices.
  8. Cover with cling film and refrigerate overnight.
