For the Chicken
  • 1.5 pounds Chicken Thighs Use breasts for a leaner option.
  • 2 tablespoons Olive Oil Can substitute with any neutral oil.
  • 2 tablespoons Lemon Juice Fresh juice is ideal.
For the Marinade
  • 4 cloves Garlic Minced.
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Ground Coriander Can substitute with fennel.
  • 1 teaspoon Smoked Paprika Regular paprika is an alternative.
  • 1 teaspoon Ground Turmeric Omit if needed.
  • 1 teaspoon Ground Cinnamon Allspice can be used as alternative.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black Pepper Adjust to taste.
For the Base
  • 1 large Red Onion Sliced.

Directions
  1. Whisk together the marinade by combining olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, ground turmeric, ground cinnamon, salt, black pepper, and lemon juice in a large bowl. Mix well until all ingredients are blended.
  2. Coat the chicken by placing the chicken thighs into the marinade and ensuring they are thoroughly covered. Allow them to sit for at least 15 minutes, preferably overnight.
  3. Layer the onions by slicing the red onion and placing it at the bottom of the slow cooker.
  4. Add the chicken on top of the onions in the slow cooker, pouring any remaining marinade over the chicken.
  5. Cover and cook on low heat for 4 hours.
  6. Shred or slice the chicken from the slow cooker and serve warm.
