Preparation
- Preheat your oven to 350°F (175°C). Grease and flour your chosen cake pans.
- In a large bowl, whisk together the flour, sugar, cornstarch, cocoa, baking powder, and baking soda until well combined.
- In a separate bowl, mix together the eggs, vegetable oil, and vanilla extract. Add boiling water and espresso powder, mixing until smooth.
- Gradually add the dry mixture into the wet ingredients, stirring gently until just combined.
- Pour the batter into prepared pans and bake for 28–35 minutes, checking for doneness with a skewer.
- Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
