How to Make Strawberry Earthquake Cake
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Prepare the strawberry cake mix according to the package directions.
- Fold in chopped strawberries, white chocolate chips, shredded coconut, and chopped nuts (if using).
- Pour half of the batter into the prepared pan.
- Beat the softened cream cheese and butter in a separate bowl until smooth. Add powdered sugar and vanilla.
- Drop spoonfuls of the cream cheese mixture over the batter.
- Pour the remaining cake batter on top and gently swirl a knife through.
- Bake for 40–45 minutes or until the center is set.
- Cool the cake completely before slicing and serving.
