Preparation Steps
  1. Preheat your oven to 375°F and bake the sweet potatoes for 50 minutes until tender. Once cool, peel them.
  2. In a large mixing bowl, combine the peeled sweet potatoes, melted butter, eggs, milk, almond and vanilla extracts, both sugars, spices, salt, and flour. Mix until smooth.
  3. Pour the filling into the deep-dish pie crusts. Bake at 350°F for 1 hour, until the center has a gentle jiggle.
  4. Remove from the oven and let the pies cool on a wire rack. Refrigerate if preparing in advance.
