Method
 

Muffin Preparation
  1. Preheat the oven to 350°F.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Whisk together the eggs and avocado oil in the same bowl with the mashed bananas.
  4. Add the pure maple syrup and vanilla extract to the wet mixture and stir until well combined.
  5. Mix the dry ingredients in a separate bowl: gluten-free all-purpose flour, baking soda, sea salt, and ground cinnamon.
  6. Combine the wet and dry ingredients gently until just incorporated.
  7. Fold in the chocolate chips if using.
  8. Pour the batter into your prepared muffin tin, filling each cup about 2/3 full.
  9. Bake for 18-22 minutes, until golden brown. A toothpick inserted should come out clean.
