Muffin Preparation
- Preheat the oven to 350°F.
- Mash the ripe bananas in a mixing bowl until smooth.
- Whisk together the eggs and avocado oil in the same bowl with the mashed bananas.
- Add the pure maple syrup and vanilla extract to the wet mixture and stir until well combined.
- Mix the dry ingredients in a separate bowl: gluten-free all-purpose flour, baking soda, sea salt, and ground cinnamon.
- Combine the wet and dry ingredients gently until just incorporated.
- Fold in the chocolate chips if using.
- Pour the batter into your prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-22 minutes, until golden brown. A toothpick inserted should come out clean.
