How to Make Gluten-Free Banana Muffins
- Preheat the oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners or greasing each cup.
- Mash the ripe bananas in a large bowl until smooth and creamy.
- Combine eggs, brown sugar, softened butter, milk, and vanilla extract into the bowl with the mashed bananas. Whisk until well blended.
- Stir in gluten-free flour, baking powder, baking soda, salt, and chocolate chips (if using) with a spatula until just mixed.
- Divide the batter evenly into the muffin cups, filling each one about 2/3 full.
- Bake for 20-22 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Cool the muffins in the pan for a few minutes before transferring them to a wire rack.
