How to Make Gluten-Free Banana Muffins
  1. Preheat the oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners or greasing each cup.
  2. Mash the ripe bananas in a large bowl until smooth and creamy.
  3. Combine eggs, brown sugar, softened butter, milk, and vanilla extract into the bowl with the mashed bananas. Whisk until well blended.
  4. Stir in gluten-free flour, baking powder, baking soda, salt, and chocolate chips (if using) with a spatula until just mixed.
  5. Divide the batter evenly into the muffin cups, filling each one about 2/3 full.
  6. Bake for 20-22 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  7. Cool the muffins in the pan for a few minutes before transferring them to a wire rack.
