How to Make Italian Cod Fish Soup
  1. Heat olive oil in a large pot over medium-high heat. Add diced onion and cook for 6-8 minutes until fragrant and translucent. Then, mix in minced garlic, diced celery, and cubed bell pepper, reducing heat to medium for another 5 minutes.
  2. Pour in the white wine and freshly squeezed lemon juice along with Italian seasoning, salt, and pepper. Cook for 2-3 minutes until the liquid reduces by half.
  3. Stir in the canned diced tomatoes, chicken or vegetable stock, and tomato paste. Allow this mixture to simmer uncovered for 10 minutes until the bell peppers are tender.
  4. Cut wild Alaska cod into bite-sized pieces and gently swirl them into the soup. Bring to a gentle boil and let it simmer for about 5 minutes, or until the fish flakes beautifully when touched.
  5. Turn off the heat, stir in the fresh chopped basil, and your Italian Cod Fish Soup is ready to be served hot!
