  • 6 oz Dry Salami Sliced into ribbons
  • 6 oz Provolone Cheese Cubed; mozzarella is a great substitute
  • 1 cup Pickled Banana Pepper Rings Drain well for no excess moisture
  • 2 cups Iceberg Lettuce Finely shredded
For the Creamy Dressing
  • 1 cup Mayonnaise Greek yogurt can lighten it if desired
  • 2 tbsp Red Wine Vinegar
  • 1 tbsp Dijon Mustard
  • 1 tbsp Dried Oregano Use fresh for more flavor if available
  • 1 tsp Cracked Black Pepper Freshly cracked is preferred

Method
 

How to Make Italian Grinder Tortellini Salad
  1. Boil the cheese tortellini in salted water for about 3-5 minutes until al dente. Drain and rinse with cold water.
  2. In a bowl, whisk together mayonnaise, red wine vinegar, Dijon mustard, half of the dried oregano, and cracked black pepper until smooth.
  3. In a large glass bowl, mix the cooled tortellini with dry salami, provolone cheese, and pickled banana pepper rings.
  4. Pour the creamy dressing over the combined ingredients and toss gently to coat.
  5. Fold in the shredded iceberg lettuce just before serving and top with remaining oregano and cracked black pepper.
