For the Seasoning
  • 1 tablespoon Dried oregano
  • 1 tablespoon Coarse sea salt
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Dried thyme
  • 1 teaspoon Garlic powder
  • 1 teaspoon Garlic salt
  • 1 teaspoon Fresh cracked pepper
For the Steak and Stuffing
  • 1 pound Flank steak pounded to 1/3 - 1/2 inch thick
  • 1 bunch Fresh asparagus woody ends removed
  • 1 tablespoon Extra virgin olive oil
  • 2 cloves Garlic freshly grated
  • 1 cup Diced red pepper
  • 1/2 cup Diced sun-dried tomatoes
  • 1/4 cup Fresh basil
  • 2 cups Fresh spinach
  • 1 large Egg yolk
  • 1/2 cup Plain bread crumbs
  • 1 cup Fresh shredded mozzarella

Method
 

Main Steps
  1. Preheat your oven to 375°F. This will ensure your steak cooks evenly.
  2. Mix the seasoning by combining oregano, sea salt, basil, rosemary, thyme, garlic powder, garlic salt, and cracked pepper in a bowl.
  3. Rub the seasoning mixture evenly over the flank steak.
  4. Sauté the garlic and diced red pepper in 1 tablespoon of olive oil over medium heat until softened, about 3-4 minutes.
  5. Stir in the sun-dried tomatoes, fresh basil, spinach, egg yolk, and bread crumbs to the pan.
  6. Spread the stuffing mixture evenly over the flank steak. Roll it up tightly.
  7. Secure the rolled steak with kitchen twine or toothpicks.
  8. Sear the stuffed flank steak in the same pan with the remaining olive oil until browned on all sides, about 8-10 minutes total.
  9. Bake the seared flank steak in the preheated oven until cooked to your liking, typically around 20-25 minutes for medium-rare.
  10. Grill or roast the asparagus while the steak is cooking for about 10 minutes until tender.
  11. Rest the steak for a few minutes after removing it from the oven, then slice and serve with the asparagus.
